10 Minute Turkey Stew


Alright all you busy people, you have no time to cook but want to make a yummy & healthy meal, this is your answer, 10 Minute Turkey Stew! You only need a few simple ingredients. 


Ingredients:
1 Can of Campbells Cream of Mushroom Soup
1 Cup of Half & Half Cream
1 Package of "Lou's Quick-N-Easy Slow Roasted Turkey"
1 Cup of Any kind of Mixed Veggies, I use frozen Green Giant Mixed Veggies
Approx. 200 g of Egg Noodles
Salt & Pepper

Set a large pot of water to a boil, throw the Lou's Turkey in the microwave for 4 mins, add Egg Noodles & Mixed Veggies to the boiling water, cook until al dente ( this is only about 9 mins)...


...While the noodles and veggies are boiling take the cooked Lou's Turkey out of the microwave and chop up into 1/2 tsp sized chunks, Strain Egg Noodles & Veggies leaving about 1/4cup of the water in, add Mushroom Soup, Half& Half Cream & your now chopped Lou's Turkey, let heat up about a minute, add Salt & Pepper to taste. 



I feel almost guilty that Turkey Stew this good tasting can be made so quickly & easily.

Chocolate Chip Banana Bread 
Mini Loaves

Ingredients:
1/2 Cup Shortening
1 Cup Sugar
3 Eggs
1/2 Tsp. Baking Powder
Pinch O' Salt
2 Cups of Flour
3 Large Ripe Banana's
1 Tsp Baking Soda
1 Tbsp. Water
Optional - 1/2 Cup Chocolate Chips, or 1/2 Cup Nuts of your choice

Grease a mini loaf pan, or one standard sized bread loaf pan.  Preheat Oven to 350 degrees. Cream 1/2 Cup Shortening, add 1 Cup Sugar, work in completely. Add in 3 Eggs stir until incorporated. Add in a pinch of Salt & 1/2 Tsp. Baking Powder.   Gradually add in 2 Cups of Flour.
In a separate bowl mash 3 Ripe Banana's using a fork. Add 1 Tsp. Baking Soda & 1 Tbsp. of Water to bowl of Banana's and mix. Add mixture to First Bowl. Add in 1/2 Cup of Chocolate Chips, or 1/2 Cup of Nuts (if you are choosing the nuts option then 3 Tsp. of Cinnamon works nicely in with them)
Bake for 25 mins at 350 degrees or until golden brown & inserted toothpick comes out clean.

Welcome to a whole new world, vertically sliced cucumbers!! So instead of cutting down the width of a cuke to get the normal round pieces the way most people cut them, this appetizer uses the novel approach of slicing the cucumber length ways from top to bottom then filling with yummies & rolling it up. You only need a few simple ingredients to get started: 



Cheese, I prefer Havarti because it provides a mild taste & is softer which helps in the rolling aspect. But you can switch it up to whatever suits your fancy.
Philadelphia Cream Cheese I chose smoked salmon, but this is also interchangeable. 
Cherry Tomatoes 
Long English Cucumber, best to use this variety, the skin is thin and edible



Do your prep & always remember to wash your veggies. You are going to take your cuke & cut it carefully lengthwise, this can be done with a knife or even better a cheese cutter. The thinner the slices the easier rolling will be.


Place a small slice of Havarti, a nickle sized wad of the Philly and half of a cherry tomato on one end of the cucumber.


Now Roll It Up!

*This might take a little practice , use a tooth pick to secure if you need to :)


These are tasty can be made with different ingredients to suit your palate, and are a pretty healthy option. I don't feel guilty eating these, I usually make up a plate of these and stash them in the fridge for when my belly in in snack mode.

If you don't have or like cucumbers or just want to try something new, throw those ingredients on a cracker. Any kind will do. I found these guys at Superstore, they are called Twistos, they are baked bread & come in a super delish Bruschetta flavor, check it:


I put the cracker then cucumber, smoked salmon philly & half a cherry tomato!


Another version of the same idea: cracker, cream cheese, half a cherry tomato & a slice of green pepper, Voila!! It also looks festive for Christmas get togethers...Make it Your Own, The Possibilities Are Endless, Enjoy :)
